I’ve said it before and I’ll say it again—vive la salade Niçoise! A hearty and delectable salad hailing from the south of France, traditionally made with the finest ingredients of the region: tuna, olives, capers, potatoes, green beans, anchovies, eggs.  This updated version of the French classic is just as tasty but involves salmon filets instead.  Tangy, hearty and full of flavor, this main course salad is perfect for lunch or a creative supper along with a small bowl of soup and a crusty French baguette.
