Oh how I love raspberry-infused balsamic vinegar! The richness of the syrupy balsamic vinegar pairs perfectly with the sweet, tart flavor of raspberries. To gild the lily I add in fresh raspberries and shallots to the vinaigrette, along with a touch walnut oil, and allow the add-ins to macerate slightly; then comes the buttery walnuts for crunch. A perfect springtime vinaigrette that works very well on a simple butter lettuce salad with creamy crumbles of blue cheese.

Raspberry-Walnut Vinaigrette
Ingredients:
- 2 Tablespoons raspberry-infused balsamic vinegar
- 1 Tablespoons walnut oil
- 2 Tablespoons extra virgin olive oil
- Salt and pepper
- 1 small shallot, minced
- 1/4 cup fresh raspberries, slightly mashed
- 1/4 cup chopped walnuts
Directions:
- Place the first 4 ingredients in a small mixing bowl. Whisk until emulsified. Add in the shallot and raspberries and allow to sit at least 1 hour before serving. Stir in the walnuts, stir again, and drizzle over your greens.
