 Who says soups are only for the cold weather months?  This lovely spring soup is filled with the bright, fresh flavors of spring. Fresh peas, leeks, fennel, carrots make this soup healthy and hearty; not to mention the addition of pasta just like a traditional minestrone soup, a sprinkling of Parmesan cheese and a dollop of homemade parsley pesto on top of each tasty bowl.  Fresh, filling and fabulous!
