I must admit, the title of this recipe does not do these perfectly sweetened muffins justice. Tender breakfast treats made with wheat brain and whole wheat flour, that get their moist texture from the addition of buttermilk, canola oil and a bit of butter. No granulated sugar is added into the batter; instead the recipe calls for a mashed banana and pitted dates cooked in orange juice to give the muffin a perfectly natural sweetness. Full of fiber and a great base recipe for add-ins like dried fruit, grated carrots and crunchy nuts, these ‘Whole Grain Bran Muffins’ are a superb morning treat!
