Not only is the broccolini roasted for this tasty side dish, but the lemon slices and garlic are as well. Roasting all three ingredients adds a decadence and extra layer of flavor to this simple dish. Buttery cloves of roasted garlic with each bite of lemony broccolini—yes, please!

Broccolini with Roasted Garlic & Lemon
Ingredients:
- 1 bunch of broccolini
- 1 small lemon, thinly sliced
- 1 head of garlic
- Salt & pepper
- Extra virgin olive oil
Directions:
- Preheat the oven to 400 degrees. Cut ½-inch off the top of the head of garlic. Place it on a square of aluminum foil and drizzle with olive oil. Roast for 45 minutes to 1 hour, or until the cloves are very tender and lightly browned.
- Trim the ends off of the broccolini. Place it on a parchment-lined baking sheet and top with slices of lemon. Drizzle with oil and season with salt and pepper. Roast for 25 minutes in the 400 degree oven. Serve with cloves of roasted garlic (peel removed.)
