One of my favorite condiments to always have on hand is a bottle of balsamic glaze. Simply a reduced version of regular balsamic vinegar, this special ingredient is rich and slightly tart—a perfect topping for roasted vegetables, meats, or in this case a flaky salmon filet. I mixed the balsamic glaze with a touch of honey for a bite of extra sweetness, then brushed it on salmon filets that were lightly seasoned with salt, pepper and a bit of dried thyme. Baked until flaky, I serve these luscious salmon dishes with a side of spiced chickpeas and a serving of sautéed spinach. A beautiful plate that comes together perfectly in no time at all.

Honey-Balsamic Glazed Salmon with Spiced Chickpeas
Ingredients:
- 2 (6-7 oz.) salmon fillets
- Salt & pepper
- Dried thyme
- 1 Tablespoon balsamic glaze
- ¼ teaspoon honey
- 1 (15 oz.) can of chickpeas
- Cayenne pepper, cumin, and dried thyme
Directions:
- Preheat the oven to 400 degrees. Line two small baking sheets with parchment paper (one for the salmon, the other for the chickpeas.) Place the salmon on a baking sheet and sprinkle each with a pinch of salt, pepper and dried thyme.
- In a small bowl, stir the balsamic glaze and honey together; brush on each salmon filet. Bake the salmon for approximately 15 minutes, or until they are flaky.
- To make the chickpeas, place them on the other baking sheet in a single layer. Drizzle them with a tablespoon of olive oil. Season with a pinch of salt, pepper, cayenne pepper, dried thyme and cumin. Bake for 25 minutes or until lightly browned.
- Serve the salmon with the chickpeas, and a side of sautéed vegetables.
