Palmiers are a classic French cookie made from flaky puff pastry dough and sugar. Rolled up and cut to slices that resemble an ‘elephant ear’ shape, these simple baked treats are a great place to start you Holiday baking. I was intrigued by this variation of the classic recipe from Real Simple magazine; instead of just sugar that caramelizes in the oven, a mixture of cocoa powder and espresso powder are added into the mix. These lovely treats make a wonderful gift in a cookie swap, or just to have around for that afternoon cup of coffee or tea.
