This unique salsa is full of flavor and a variety of colorful ingredients. Ripe tomatoes, diced red onions and cilantro are typical ingredients for any salsa, but with the addition of roasted sweet potatoes and creamy avocado, this homemade salsa is far from typical! Serve it with your favorite variety of crispy tortilla chips—and a margarita of course.

Sweet Potato, Tomato & Avocado Salsa
Ingredients:
- 1 large sweet potato, scrubbed and cut into ½-inch dice
- Extra virgin olive oil
- Salt & Pepper
- 2 Roma tomatoes, diced
- ½ cup fresh cilantro, chopped
- 1 small red onion, diced
- 1 avocado, diced
- 2 limes, juiced
- Dash of hot sauce
- Tortilla chips, for serving
Directions:
- Preheat the oven to 375 degrees. Line a baking sheet with parchment paper. Place the diced sweet potatoes in a single layer on the baking sheet; drizzle with olive oil and season with salt and pepper. Roast the potatoes in the oven for 25-30 minutes, or until tender. Allow the potatoes to cool to room temperature.
- While the potatoes cook, place the diced tomatoes, cilantro, red onion and avocado in a mixing bowl. Squeeze the lime juice onto the mixture and toss. Add in a dash of hot sauce, salt and pepper to taste, and drizzle of olive oil. Toss gently; add in the cooled sweet potatoes and serve with tortilla chips.
