Haricots Verts with Hazelnuts & Gorgonzola

 Tender, French green beans cooked until crisp in a touch of olive oil then flavored with a squeeze of lemon juice, a touch of white wine, buttery hazelnuts, and creamy crumbles of Gorgonzola cheese.  Sounds like a lovely Fall side dish, right?  Come to think of it, keep this simple side in mind when you start your Holiday menu planning as well…

Haricots Verts with Hazelnuts & Gorgonzola

Ingredients:

  • 1 Tablespoon extra virgin olive oil
  • 8 oz. green beans, preferably haricots verts
  • Salt & pepper
  • Juice of 1 lemon
  • ½ cup dry white wine
  • ½ cup hazelnuts
  • ¼ cup crumbled Gorgonzola cheese

Directions:

  1. In a large, straight-sided sauté pan, heat the olive oil over medium-high heat. Add in the green beans and season with ½ teaspoon of salt and a grinding of black pepper. Cook, tossing often, for 5-7 minutes or until the green beans become lightly browned and tender.
  2. Reduce the heat to medium-low and add in the lemon juice and white wine. Cook for an additional 5 minutes. Serve the green beans topped with the hazelnuts and crumbled cheese.
