I love this time of year when Fall is approaching and as you meander through your local farmer’s market or grocery store, you begin to see a variety of gorgeous squash. Everything from acorn squash, spaghetti squash, butternut squash, kabocha squash, carnival squash, sugar pumpkin—you name it, I love them all. My suggestion to you is to buy a squash that may be unknown to you and search for a recipe on your favorite recipe website. You’ll be amazed at the different flavors and cooking ideas for these lovely winter squash!
One such recipe I came across from www.MarthaStewart.com was for a ‘Moroccan-Style Stuffed Acorn Squash.’ Having recently acquired two lovely acorn squash from our weekly CSA box, this was a perfect main course dish that inspired me to pair it with other Moroccan-scented dishes. These acorn squash are roasted until perfectly tender and stuffed with a mixture of ground beef (preferably grass-fed), grains, golden raisins, pine nuts and the warm taste of ground cinnamon and nutmeg. Perfect when paired with curried okra and a unique side salad filled with dried apricots, fresh herbs, and chickpeas, this dish was a welcomed introduction to what I’m sure will be a season filled with yummy squash varietals.
