I can’t think of a more comforting dish to serve on the first day of the Fall season. A one-pot dish of succulent roast chicken, cauliflower, tender sweet potatoes, pancetta and capers flavored with olive oil and fresh rosemary. A simple dish that is easy to prepare, and even easier to enjoy. Round it out with a simple side salad and a glass of wine and dinner is served.
