Sliced cucumbers are a lovely addition to a crudité platter, a refreshing summer cocktail, and even your favorite salad. Crisp and fresh in flavor, cucumbers are a welcomed addition to many dishes. But have you tried cooking cucumbers? This idea is very popular in French cooking and is an amazing way to transform cucumbers into a savory side dish.
Simply cook sliced cucumbers in a mixture of olive oil and butter until lightly browned, season with a touch of salt and pepper and away you go! I’ve taken it a step further in this recipe and tossed the cooked cucumber together with some of the best flavors of the Mediterranean: sundried tomatoes, pine nuts, and creamy feta cheese. Mediterranean Braised Cucumbers
Ingredients:
- 1 Tablespoon extra virgin olive oil
- 1 Tablespoon unsalted butter
- 2 cucumbers, halved lengthwise, seeds removed and sliced
- Salt & Pepper
- ½ cup sun-dried tomatoes, packed in oil, drained
- ½ cup crumbled feta cheese
- ¼ cup pine nuts, toasted
Directions:
- In a large sauté pan heat the oil and butter over medium heat until the butter is melted. Add the sliced cucumbers in to the pan along with a pinch of salt and pepper and sauté, stirring constantly, for 5-7 minutes or until the cucumbers are tender and lightly browned.
- Allow the cucumber to cool to room temperature and then toss with the remaining ingredients. Serve warm or room temperature.
