With a new stash of Ball jars and a craving for a pickled treat, I pulled out this recipe for Spiced Carrots from Martha Stewart’s WholeLiving.com website. A quick and spicy brine of apple cider vinegar, fennel seeds, coriander seeds, fennel seeds, black peppercorns and a cinnamon stick heated and poured on top of carrots rounds, garlic and a hot red pepper for a touch of heat. Simple make the brine, pack the jars, refrigerate, and in a few hours you have a quick batch of carrot pickles. Wonderful as a snack, part of an antipasto plate or given as a hostess gift, these carrots are uniquely spiced and quite addictive.
