This lovely recipe for Chicken & Artichoke Orzo with Herb Vinaigrette is based on a recipe I found on Martha Stewart.com. A light yet satisfying pasta salad of whole wheat orzo, cubes of grilled chicken, artichoke hearts and capers, all tossed with a homemade herb vinaigrette and finished off with a sprinkling of Parmesan cheese. I like to serve this tasty dish over lettuce and with a cup of soup for a light supper, or as the original recipe suggests, this would also be a nice filling for a lettuce wrap or Romaine lettuce cup for a lunchtime treat.
