Green Bean Slaw with Almonds

 My Green Bean Slaw with Almonds is a Southern side salad bursting with a variety of flavors and textures.  How do you know this is a Southern-style salad?  It’s topped with crumbled pieces of hard boiled egg of course!  How can you resist a serving of tender sautéed green beans tossed with a tangy mustard vinaigrette, sliced almonds, and a topping of decadent hard boiled egg?  Try this side dish with your next roasted chicken, or maybe even at your next barbeque alongside your other favorite side dishes.

Green Bean Slaw with Almonds

Ingredients:

  • 8 oz. French green beans
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ cup low-sodium chicken broth, or vegetable broth
  • ½ cup sliced almonds
  • 2 hard boiled eggs, crumbled
  • For the vinaigrette:
  • 1 Tablespoons Dijon mustard
  • Juice of 2 lemons
  • ¼ cup extra virgin olive oil
  • Pinch of crushed red pepper flakes
  • Pinch of salt and pepper

Directions:

  1. In a large straight-sided sauté pan, heat the olive oil over medium-high heat. Add in the green beans and season with salt and pepper. Saute for 3-4 minutes, or until the green beans start to get tender; add in the chicken stock, reduce the heat to medium and cook the beans for another 3 minutes.
  2. In the meantime, whisk the vinaigrette ingredients together in a small bowl until emulsified.
  3. Place a portion of the cooked green beans on each serving plate. Drizzle with some of the vinaigrette, the almonds, and finally the topping of crumbled egg. Serve warm.
