Crispy Baked Chicken
Ingredients:
- 4 chicken breasts
- Salt & pepper
- 2 Tablespoons Dijon mustard
- ½ cup dry white wine
- All-purpose flour
- ¾ cup Panko breadcrumbs
- ¼ cup grated Parmesan cheese
- Extra virgin olive oil
Directions:
- Preheat the oven to 375 degrees. Line a rimmed baking sheet with parchment paper. Season each chicken breast with salt and pepper.
- Make your breading station: in three shallow bowls place 1) the mustard and dry white wine, whisked 2) the flour and 3) the mixture of Panko and Parmesan cheese. Dip both sides of each seasoned chicken breast in the mustard mixture, then the flour, then the breadcrumb-cheese mixture. Place each breaded chicken breast on the prepared baking sheet; drizzle each with a touch of olive oil.
- Bake the chicken for 35-40 minutes or until the chicken has reached an internal temperature of 165 degrees and the outside is brown and crunchy.
