This simple salad is full of fresh flavors that pair oh-so-well together: a base of peppery arugula tossed with sweet orange segments, creamy feta cheese, and crunchy, buttery hazelnuts. All garnished with a light orange vinaigrette, my Arugula Salad with Oranges, Feta & Hazelnuts is a lovely side salad, or main course salad with the addition of grilled shrimp or even poached chicken.

Arugula Salad with Oranges, Feta & Hazelnuts
Ingredients:
- 4 cups arugula leaves
- 1 large navel orange, segmented
- ½ cup crumbled feta cheese
- ¼ cup hazelnuts
- For the vinaigrette:
- ¼ cup fresh orange juice
- 3 Tablespoons extra virgin olive oil
- Pinch of salt, pepper and crushed red pepper flakes
Directions:
- Toss the salad’s ingredients together in a large mixing bowl. To make the vinaigrette, whisk the ingredients together in a small mixing bowl until emulsified. Divide the salad among four salad plates and drizzle each with some of the vinaigrette.
