A lovely way to liven up a simple baked chicken breast is to coat it in a sweet yet tangy glaze of apricot jam and Dijon mustard. Simply heat the jam along with the mustard in a small saucepan until it becomes a sauce-like consistency, then spread it over your chicken breasts and bake until the chicken is tender and juicy. This would also be a nice glaze for your next baked pork chop, too.

Apricot-Glazed Chicken
Ingredients:
- 4 boneless, skinless chicken breasts
- Extra virgin olive oil
- Salt & pepper
- 1 ½ cups of apricot jam
- 2 Tablespoons Dijon mustard
Directions:
- Preheat the oven to 350 degrees. Line a baking sheet with parchment paper. Place the chicken breasts on the baking sheet and drizzle each of them with a touch of olive oil and a sprinkling of salt and pepper.
- Place the jam and the mustard in a small saucepan. Over medium-low heat, whisk constantly until the sauce is smooth and warmed through. (this will take approximately 5 minutes)
- Spread the jam-mustard glaze evenly over each chicken breast. Bake in the preheated oven for 30-35 minutes, or until the chicken is cooked through and reaches an internal temperature of 165 degrees.
