I absolutely love Birthdays—the gift giving, the celebrating, and of course, the cake eating. Not just the cake eating mind you, I love the cake baking part just as much. Creating Birthday cakes for friends and loved ones on their special days is one of my favorite ways to contribute to a loved one’s celebration. With so many cake batters, shapes, fillings, icings and garnishes to choose from, Birthday cakes are just as unique as the Birthday boy or girl themselves. The last two Birthday cakes I have made were both topped with an amazingly rich, perfectly sweet, and super creamy White-Chocolate Buttercream Icing. Courtesy of Martha Stewart and her team, this 4-ingredient icing is super delicious and one batch makes enough icing for two cakes (and freezes well for up to 1-month!) The first cake I made was a raspberry-white cake and the second, a traditional yellow cake flavored with vanilla and topped with fresh strawberries. (This frosting would also be delicious on your favorite cupcakes or perhaps even in between two freshly baked sugar cookies I imagine…)
