When you think of a warm bowl of fluffy mashed potatoes, you automatically think of the creamy texture from the added butter, right? Not in this case! My Kale & Olive Oil Mashed Potatoes are a much healthier variation on the classic, comforting side dish. You start first with tender, peeled Yukon gold potatoes, cooked until tender and mashed until smooth. Seasoned with salt and pepper and mixed with a rich, quality olive oil, these mashed potatoes take on the gorgeous flavor of the fruity olive oil. To make these potatoes even more delicious, they are combined with a heaping mound of lovely sautéed kale. A beautiful and healthy side dish that you and your family are sure to love!

Kale & Olive Oil Mashed Potatoes
Ingredients:
- For the mashed potatoes:
- 3 large Yukon gold potatoes, peeled and quartered
- Salt & black pepper
- 1/3 cup quality extra virgin olive oil
- For the sautéed kale:
- 1 Tablespoon extra virgin olive oil
- 1 bunch of kale, stems removed and leaves cut into bite sized pieces
- ¼ teaspoon salt
- Pinch of black pepper
Directions:
- Place the peeled and cut potatoes in a large pot of salted water. Bring to a boil and cook for 12-15 minutes or until the potatoes are tender when pierced with a knife. Drain the potatoes and place them in a large mixing bowl. Mash with a potato masher, season with 1 teaspon salt and ½ teaspoon of freshly ground black pepper. Add in the olive oil and stir until combined.
- In the meantime, heat the 1 Tablespoon of oil in a large sauté pan over medium-high heat. Add in the washed and cut kale and season with salt and pepper. Sauté for 3 minutes or so, just until the kale is wilted and soft. Add the cooked kale into the mashed potato mixture. Serve warm.
