Ingredients:

  • For the mashed potatoes:
  • 3 large Yukon gold potatoes, peeled and quartered
  • Salt & black pepper
  • 1/3 cup quality extra virgin olive oil
  • For the sautéed kale:
  • 1 Tablespoon extra virgin olive oil
  • 1 bunch of kale, stems removed and leaves cut into bite sized pieces
  • ¼ teaspoon salt

Directions:

  1. Place the peeled and cut potatoes in a large pot of salted water. Bring to a boil and cook for 12-15 minutes or until the potatoes are tender when pierced with a knife. Drain the potatoes and place them in a large mixing bowl. Mash with a potato masher, season with 1 teaspon salt and ½ teaspoon of freshly ground black pepper. Add in the olive oil and stir until combined.
  2. In the meantime, heat the 1 Tablespoon of oil in a large sauté pan over medium-high heat. Add in the washed and cut kale and season with salt and pepper. Sauté for 3 minutes or so, just until the kale is wilted and soft. Add the cooked kale into the mashed potato mixture. Serve warm.
