 My Cucumber Rounds with Goat Cheese & Olive Tapenade is a colorful and tasty Mediterranean appetizer that everyone will love.  A simple small bite made up of cucumber slices, creamy goat cheese and tangy olive tapenade that is both flavorful and irresistible.  You can use plain goat cheese or a flavored variety with herbs and spices; whichever variety you choose, the end results are sure to please.

Cucumber Rounds with Goat Cheese & Olive Tapenade

Ingredients:

  • 1 cucumber, washed, ends trimmed and sliced into ¼-inch rounds
  • Goat cheese, room temperature
  • Olive tapenade, store bought or a mixture of olives chopped by hand and mixed with olive oil
  • Fresh herbs, for garnish (optional)

Directions:

  1. To make these simple stacks, simple spread some goat cheese onto each cumber round and top with a bit of olive tapenade. Garnish with fresh herbs, if desired.
