Juicy red grapes and fragrant rosemary are a classic combination of toppings for focaccia in Italy. Focaccia, an oven-baked Italian bread, can be made with your favorite store bought pizza dough or with your favorite homemade recipe. The key is to make indentions in the dough with your fingers so that the olive oil and flavorings get caught in each bite of the focaccia. Whether enjoyed as a first course over cocktails, or as part of a light lunch, my Focaccia with Rosemary & Grapes is a tasty addition to any meal.

Focaccia with Rosemary & Grapes
Ingredients:
- 1 ball of store bought or homemade pizza dough
- 1 cup of red, seedless grapes, cut in half
- 4 sprigs of fresh rosemary, stems removed
- ½ teaspoon kosher salt
- ¼ teaspoon freshly ground black pepper
- Extra virgin olive oil
Directions:
- Preheat the oven to 425 degrees. Line a baking sheet with parchment paper. Allow the pizza dough to rest at room temperature, covered with plastic wrap in an oiled bowl for 1 hour. Then form the dough into a round-shape and place on the lined baking sheet.
- Make indentions in the dough with your fingers. Top the focaccia dough with the halved grapes, rosemary, salt and pepper. Drizzle the focaccia with olive oil (about 1 Tablespoon).
- Bake for 30-35 minutes or until the focaccia is lightly browned and puffed up in the middle. Drizzle with extra olive oil and allow to rest for 10 minutes before slicing to serve.
