Spicy Angel Hair with Roasted Zucchini

Spicy Angel Hair with Roasted Zucchini

Ingredients:

  • 1 lb. whole wheat angel hair
  • 3 large zucchini, ends trimmed and cut into ¼ inch rounds
  • Extra virgin olive oil
  • Salt and pepper
  • For the chili oil:
  • ½ cup extra virgin olive oil
  • 1 Tablespoon crushed red pepper flakes
  • 2 garlic cloves, finely minced

Directions:

  1. Cook the pasta in a large pot of boiling water until al dente. Drain and set aside.
  2. Meanwhile, preheat the oven to 375 degrees. Line a baking sheet with parchment paper and palce the zucchini rounds in a single layer on the baking sheet. Drizzle the zucchini with oil and season with salt and pepper. Roast for 25 minutes, or until the zucchini are lightly browned and tender.
  3. To make the chili oil, place the olive oil, red pepper flakes and garlic in a small saucepan. Heat over low heat until warmed through.
  4. Toss the cooked pasta and the zucchini rounds in the spicy oil in a large mixing bowl. Serve warm.
