Lamb Chops with Mint Oil & Pine Nuts
Ingredients:
- 1 teaspoon of extra virgin olive oil
- 8 frenched lamb chops
- Kosher salt and freshly ground black pepper
- Mint oil, or quality extra virgin olive oil mixed with finely chopped fresh mint, for drizzling
- Pine nuts, toasted
Directions:
- Season both sides of the lamb chops with salt and pepper. In a large skillet heat the oil over medium-high heat. Add the lamb chops and cook for 3 minutes on each side, or until the meat is cooked to your liking.
- Remove the lamb chops from the heat and place on a serving platter. Drizzle with the mint oil and the toasted pine nuts.
