I am filled with glee each year when I see the first ripe stone fruits in the market! This week, I saw the first batch of small, sweet Georgia peaches and my mind starting going to work with dessert ideas. What I came up with was a fresh peach and raspberry pie topped with some crunchy granola from our CSA. The granola is a butter pecan variety that is perfectly toasted and crispy; those flavorings along with the pure vanilla extract and squeeze of lemon juice in the pie filling make for a decadent warm weather treat.

Peach & Raspberry Granola Crunch Pie
Ingredients:
- (1) 9-inch pie crust (store-bought or homemade)
- For the filling:
- 6 small, ripe peaches, thinly slices (or 3 large peaches)
- (1) pint of organic raspberries, rinsed
- 1 teaspoon pure vanilla extract
- juice of 1/2 lemon
- 1/4 cup organic granulated can sugar
- pinch of salt
- 2 Tablespoons organic cornstarch or arrowroot
- For the topping:
- 1 cup of your favorite toasted granola
- 1 Tablespoon unsalted butter, cut into small cubes
- To serve: vanilla ice cream or lightly sweetened whipped cream
Directions:
- Preheat the oven to 350 degrees.
- To prepare the pie filling, toss the sliced peaches and raspberries together with the vanilla, lemon juice, sugar, salt and cornstarch until the fruit is coated. Pour into the pie crust and place the pie crust on a baking sheet.
- Top the pie with the granola and dot with the small cubes of butter.
- Bake in the preheated oven for 45-50 minutes, or until the crust is lightly browned and the filling is bubbly.
- Serve with vanilla ice cream or lightly sweetened whipped cream.

This pie is a really easy way to use up any fresh or frozen fruit on hand! And a unique way to use your favorite store-bought granola.
Some other fruit combos I like here are bing cherries with blackberries, or even pears with fresh raspberries. Dealer’s choice!
