Radicchio & Walnut Salad with Golden Raisins and Sage Vinaigrette

The key to this salad is to not overdress it with the homemade vinaigrette–that way, each bite of the bitter radicchio, crunchy, buttery walnuts, and sweet golden raisins is just that.  Lightly dressing this salad with a flavorful vinaigrette made with chopped, fresh sage, lemon juice and walnut oil only adds to the overall recipe’s depth of flavor, it doesn’t mask the other ingredients’ natural tastes and textures.

Ingredients:

  • 1 head of radicchio, outside layer of leaves removed, core-end removed, leaves thinly sliced
  • 1/2 cup walnut pieces
  • 1/4 cup golden raisins
  • For the vinaigrette, whisk the following ingredients together:
  • juice of 1 large lemon
  • 1 1/2 Tablespoons chopped, fresh sage
  • 1 garlic clove, minced
  • 3 Tablespoons walnut oil
  • salt and pepper to taste
