This salad is all about crunch and flavor. Chopped sweet apples (I like either Honey Crisp or Pink Lady varieties in this particular salad) and fresh celery stalks and leaves are combined with a homemade Dijon vinaigrette, cubes of salty cheese, fresh herbs and roasted nuts. A healthy and lovely side dish for just about any entrée on your mind.

Crunchy Celery, Apple & Pecorino Salad with Pistachios
Ingredients:
- 1 crisp, sweet apple, medium-dice
- 4 stalks of celery, sliced with leaves
- 2 oz. Pecorino Romano cheese, medium-dice
- ¼ cup roasted pistachios
- 1 Tablespoon chopped fresh herbs (chives and fresh thyme work well)
- For the vinaigrette:
- 3 Tablespoons olive oil
- ¼ cup apple cider vinegar
- Pinch of crushed red pepper flakes
- 1 ½ teaspoons Dijon mustard
- Salt and pepper to taste
Directions:
- Toss the salad ingredients together in a medium bowl. Whisk the vinaigrette ingredients together (or shake in a jar) until emulsified; season with salt and pepper to taste remembering that the cubed cheese adds a lot of salt and flavor. Toss the salad with the vinaigrette and serve at room temp.
