It seems that turmeric is all-the-buzz right now. Whether in its fresh form or ground, turmeric hails from the ginger family and is not only versatile spice, but healthy for us as well. This recipe looks simple from its photo, but there are a lot of flavor components happening all at once. First off, the rice is cooked in coconut milk for a creamy and rich flavor; golden raisins are plumped up in the warm coconut milk which is also flavored with brown sugar, cinnamon and a touch of cardamom. The rice absorbs the milk and flavorings as it puffs up and the dish is finished off with roasted pistachios for crunch and a lovely splash of color. (This recipe calls for freshly grated turmeric, but I subbed in 2 teaspoons of ground turmeric from the pantry instead.)
