Any small potato will work just fine for this scrumptious side dish. Simply quartered potatoes boiled until tender and tossed with your favorite homemade or store-bought basil pesto sauce, along with sweet green peas. A squeeze of lemon juice before serving really brightens up this tasty warm potato salad.

New Potatoes with Peas & Pesto
Ingredients:
- 1 lb. small potatoes (any variety will do), quartered
- 1 large lemon
- 1 cup basil pesto, at room temperature
- 1 ½ cups sweet green peas, thawed
- Salt and pepper to taste
Directions:
- Bring a pot of salted water to a boil with the quartered potatoes in it. Cook for approximately 12-15 minutes or until the potatoes are tender when pierced with a knife. Toss the cooked potatoes with the pesto, lemon juice, and peas. Taste and adjust seasonings if necessary. Serve warm.
