The idea for this lovely salad came from an older Martha Stewart Gardening episode I recently watched. She was interviewing a farmer who grew mâche: the tender, French green that is also sometimes referred to as lamb’s lettuce. Delicate yet buttery in nature, I adore these tender greens on a sandwich or in a simple salad like this one. Along with the mâche are thin slices of prosciutto and roasted parsnips. A sophisticated salad that your dinner companions are sure to love.

Tender Mâche with Roasted Parsnips & Prosciutto
Ingredients:
- 4 cups mâche greens
- 1 lb. parsnips, peeled and cut into 2-inch pieces
- olive oil
- salt and pepper
- paprika
- 4 oz. thinly sliced prosciutto
- Your favorite vinaigrette
Directions:
- Preheat the oven to 375 degrees. Line a baking sheet with parchment or foil; spray with olive oil spray. Arrange the prepared parsnips in a single layer on the baking sheet. Drizzle with 1 Tablespoon of olive oil, ½ teaspoon of salt, a big grinding of pepper, and about ½ teaspoon of smoked paprika. Roast for 20-25 minutes or until tender when pierced with a knife.
- Toss the mache with your favorite vinaigrette. Arrange the sliced prosciutto around the greens on a salad plate to look like roses. Serve the salad with the warm roasted parsnips.
