Yet another fabulous and simple recipe from Real Simple magazine! If you don’t subscribe, I highly recommend that you do, but their website is always a great resource for healthy and quick weeknight dinners if you choose to go that route. For this recipe you stuff a thick, bone-in pork chop with sauteed Swiss chard, garlic and a creamy slice of provolone cheese. The cheese melts beautifully and the chard on the inside of the pork chop is a great way to add in extra greens to the plate. The recipe calls for baking he pork chop, but on a lovely night like last night, why not grill them instead? The recipe calls for a quick and easy green beans saute (that I decided to add slice carrots into as well), but the cool part about the saute is that you are also cooking the lovely multi-colored Swiss chard stems along with the green beans.
