I have really learned to embrace my slow cooker over the past couple of years. It used to be that I used it only to make homemade stocks (which I still do quite often!), but on busy work days like yesterday I also love using it to make us a comforting dinner like this one. It’s so lovely knowing that while you are out-and-about and busy with your day, your dinner is slowly cooking away at home…
I was amazed with the results of this recipe for a Cuban beef dish called Ropa Vieja. Not only was the flank steak fall-apart tender (sort of the same texture as a well-cooked brisket), but also at the flavor combination or cumin, dried oregano, green olives, sweet peppers, fire-roasted tomatoes and plump raisins. Such a fabulous dish that I love serving over fluffy brown rice. I highly recommend this amazing slow cooker Cuban dish on your next super busy day!
