The smokiness of the roasted red peppers pairs beautifully with the creaminess of ricotta cheese in this satisfying soup.  Minimal in its ingredients but the results are a soup with maximum flavor!  The unique thing about this recipe is that you actually puree the main ingredients of this soup together before adding them into the pot and warming it all up.  Store-bought roasted red peppers are recommended here… so that makes life even that much easier!
