The title of this simple recipe says it all. Stems of broccolini wrapped in thinly sliced prosciutto, seasoned and roasted until tender along with slices of tart lemons. Voila–a wonderful side dish in minutes.

Lemony Broccolini & Prosciutto Bundles
Ingredients:
- 1 bunch of broccolini
- 1 lemon
- Salt and pepper
- Olive oil
- 4 slices of prosciutto
Directions:
- Preheat the oven to 375 degrees. Trim the ends from the broccolini and separate the bunch into piles of 3 each.
- Wrap each of the sets of 3 stems with 1 slice of prosciutto. Arrange in a single layer on a baking sheet. Drizzle with a touch of oil and a sprinkling of salt and pepper. Place a lemon slice on each bundle.
- Roast in the preheated oven for 15-18 minutes, or until the broccolini is tender and the prosciutto crispy.
