A wonderful Farmer’s Market in the Atlanta area if you haven’ t already been, is the Freedom Farmer’s Market at the Carter Center. Every Saturday morning in March through December, there are quite a few local farms represented as well as bakeries, flowers, food vendors, you name it. I recently bought a jar of pickled green tomatoes from the ‘Doux South Organic Pickles’ booth. Boy are they tangy and tasty!
I decided to use my last few pickled green tomatoes in an easy black-eyed pea side dish. Really no recipe required here; simply pop open a can of your favorite black-eyed peas, rinse and drain them, and then heat them up in a saute pan with a touch of oil, a chopped onion, scallions, a chopped red pepper and some of the diced pickled tomatoes. Pour in a touch of stock for moisture, and season with a touch of salt and pepper. Don’t forget to serve this dish with your favorite pepper sauce or hot sauce as well! You’ll really enjoy this Southern side dish; it gets its tang from the pickled tomatoes and buttery from the lovely black-eyed peas. Great as a vegetarian main dish as well when served over white rice.
