Think of this as a cross between baked pasta and a quiche. Sounds strange, I know, but it really is delightful. Layers of store-bought spinach ravioli topped with halved cherry tomatoes and a rich egg and Parmesan cheese mixture. Baked with a crispy Panko topping until browned and puffed, this vegetarian entree is perfect with a side of sautéed greens and tender roasted carrots.
