‘Pesto Pork Pinwheels with Grilled Peaches’

Whether you choose to grill or broil these flavorful pork pinwheels, the results will be the same: a resounding ‘hoorah!’ for the chef!  You don’t have to tell your dinner guests how simple this dish was to make either; just soak in the praise and enjoy.  This recipe would work well with a turkey tenderloin as well; simply butterfly the tenderloin and then spread a mixture of pesto sauce and breadcrumbs on the flattened out piece of meat.  Roll the pork up into a roulade-shape and then cut into pinwheels shapes.  Thread on skewers and grill away!  The taste of sweet grilled peaches is a lovely compliment to this tasty dish.  While the grill is going throw on some seasoned broccolini for a nice, easy green side dish.
