What a colorful and unique summer salad idea! It might sound strange to pair tomatoes with strawberries, but the sweetness of the berries works very well with the wedges of juicy heirloom tomatoes. The crisp taste of cucumbers and the pepperiness of the red onion also add a lovely texture to the salad’s composition. A sprinkling of fresh herbs later, you have quite a unique salad that pairs well with grilled chicken, fish, or even on its own with your favorite summer soup. (Seeing that both tomatoes and strawberries go very well with balsamic vinegar, I added a drizzle of white balsamic to the top of the salad, along with the olive oil, before serving.)

‘Strawberry & Tomato Salad’
Ingredients:

- 2 cups strawberries, hulled and halved
- 1 ripe heirloom tomato, cut into 1/2-inch wedges
- 1 cucumber, halved lengthwise and thinly sliced
- 8 lemon verbena leaves, cut into ribbons (or use any fresh herb from the garden like basil, mint, oregano or thyme)
- 3 Tablespoons extra virgin-olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- (I drizzled a touch of white balsamic vinegar over the salad before serving as well*)

- In a bowl, combine the berries, tomato wedges, cucumber, red onion, and herbs. Toss with the olive oil, salt, and pepper and serve.
