With all of the tempting summertime produce around, not to mention the sweltering heat outside this time of year, I love serving a healthy entrée salad like this one for a light summer supper. Grilled fillets of salmon top this hearty Nicoise-like salad of peppery watercress, slices of hard-boiled egg, crispy sugar snap peas and buttery roasted new potatoes. Serve the salad with a drizzle of a mustard vinaigrette or a light lemon vinaigrette, and a glass of crisp Rosé wine.
