I had been holding onto this Southern Living recipe for just over a year now; this stunning, show-stopping, incredible ice cream cake perfect for celebrating the 4th of July. Being lucky enough to share this year’s 4th of July holiday with the best of friends, I couldn’t think of a more perfect occasion. Easy to make and even easier to devour, this layered frozen cake is made with slices of buttery pound cake, vanilla ice cream flavored with blueberry preserves, raspberry sorbet, fluffy whipped cream (which I decided to flavor with a touch of crème de cassis) and fresh berries. I couldn’t think of a better dessert to serve this holiday weekend. But no need to save this recipe for your 4th of July weekend next year, this lovely fruity dessert will be just as enjoyable anytime this summer!
