Vanilla Ice Cream with Candied Pecans & Espresso Caramel

This caramel sauce is rich and full of that dark espresso flavor that we all know and love.  The base of this unique sauce is a sweet, amber caramel made from brown sugar and heavy cream; enriched with butter and finished off with a whisking in of espresso powder, this sauce would also be wonderful on a bread pudding or even a slice of vanilla pound cake.  This elegant dessert is the perfect sweet ending to any meal!

Vanilla Ice Cream with Candied Pecans & Espresso Caramel

Ingredients:

  • Vanilla ice cream
  • Pecan candy (store bought or homemade)
  • For the espresso caramel:
  • ¼ cup dark brown sugar
  • ½ cup heavy whipping cream
  • Pinch of salt
  • 2 Tablespoons unsalted butter
  • 1 Tablespoon instant espresso powder

Directions:

  1. Scoop the ice cream into dessert dishes and top with pecan candy and some of the espresso caramel.
  2. To make the caramel, place the sugar, cream, salt and butter in a medium saucepan. Bring to a simmer over medium heat, whisking constantly. Cook for 3 minutes, or until the butter is melted and the sauce starts to become thicker. Whisk in the espresso powder and cook for an additional minute, or until the sauce is amber in color. Serve over the ice cream with the candied pecans.
