Hearty Chicken Pot Pies

 If you are searching for a comforting dinnertime dish to enjoy on a cold winter’s night, look no further!  This easy and oh-so-hearty chicken pot pie recipe is all that and more.  Tender pieces of chicken in a thick sauce made with butter, vegetables and chicken stock all topped with either a round of puff pastry or buttery pie crust, baked until browned and fragrant.  The trick to making this comforting classic in no time is a store-bought rotisserie chicken and pre-made pastry.  I had pie crusts in my freezer so that is what I used, but a defrosted sheet of puff pastry would also be just as decadent.  This soul-warming dish from Martha Stewart Living magazine is just as delicious as it is fun to make.
