This rustic French lentil salad recipe is a lovely side dish to serve alongside your favorite roast chicken recipe, or on its own as a hearty vegetarian dinner idea. I absolutely loved the idea of a warm lentil salad studded with carrots and onions, tossed in fresh herbs, a simple vinaigrette and served on top of peppery arugula. The addition of wedges of creamy blue cheese was the cherry on the sundae. Such a wonderful recipe to look at….and to taste!
