As promised, yet another clever and tasty recipe from Radically Simple, an outstanding cook book by Rozanne Gold. A moist, roast chicken made special with the addition of a creamy and savory mixture of goat cheese, fresh lavender and basil—pureed until smooth and then stuffed underneath the skin of the chicken. Once roasted the cheese-mixture not only flavors the chicken, but helps the chicken stay super moist as it cooks. A very Provencal combination of flavors that that would also be an outstanding stuffing for a thick pork chop or even a turkey tenderloin.
