This is such refreshing spinach salad that goes perfectly with a grilled steak or fish filet, or even a roasted chicken. Tender baby spinach leaves accompanied by grilled red onions and grilled oranges wheels, tossed together with creamy blue cheese crumbles and good-for-you sliced avocado. I like to drizzle a red wine vinaigrette over this scrumptious salad, but a white balsamic vinaigrette would work just as well.

Baby Spinach Salad with Avocado, Grilled Red Onions, Blue Cheese & Oranges
Ingredients:
- 4-6 cups baby spinach
- 1 red onion, sliced–drizzled with oil
- Extra virgin olive oil
- Salt and pepper
- 1 orange, cut into rounds
- 1 ripe Haas avocado, sliced
- crumbled blue cheese
- Your favorite red wine vinaigrette
Directions:
- Preheat the grill pan (sprayed with cooking spray) over medium-high heat. Grill the sliced red onion and orange wheels for approximately 2 minutes, turning once.
- To assemble the salad, toss the spinach with the avocado slices, blue cheese and the grilled red onion and oranges.
- Drizzle with the vinaigrette and serve.
