Sometimes the simplest of recipes really are the best. Take this simple side dish for example; roasted new potatoes flavored with herbs de Provence, salt, pepper and a drizzle of olive oil. The flavors of this classic spice blend include rosemary, lavender, thyme, oregano, savory and marjoram; we use this blend on steaks before grilling, tomatoes before roasting and it adds the perfect blend of flavors. Serve these lovely potatoes on a bed of watercress, sprinkled with micro greens, or even on your next Niçoise salad.

Roasted New Potatoes with Herbs de Provence
Ingredients:
- ½ lb. new potatoes, quartered
- Olive oil
- Salt and pepper
- Herbs de Provence
- Micro greens or watercress, for serving
Directions:
- Preheat the oven to 375 degrees. Line a large baking sheet with parchment paper or foil. Place the quartered potatoes in a single layer on the baking sheet. Drizzle them with oil, a sprinkling of salt, pepper, and herbs de Provence. Roast for 25—30 minutes or until tender. Serve with the micro greens or watercress.
