The unique mixture of flavors in this easy baked chicken dish are incredible! Tender chicken thighs tossed in a mixture of sliced rhubarb, ginger, garlic, saffron, ground cinnamon, and red onion and then baked with a touch of brown sugar and white wine until bubbly and fragrant. The sauce gets its lovely yellow-hue from the pinch of saffron and the chicken absorbs the sweetness of the rhubarb, the wine and the fragrant ginger. The dish is finished off with sprigs of fresh cilantro and a sprinkling of sliced almonds and is perfect when served over fluffy white rice.
