This simple side dish is bursting with the delicate flavors of spring. Tender cubes of peppery turnips tossed with melted butter, crunchy ground pistachios, and finely chopped fresh mint. A refreshing dish that really puts the season’s turnips in the culinary spotlight!

Buttered Turnips with Pistachios & Mint
Ingredients:
- 4 small turnips, peeled and diced
- 2 Tablespoons unsalted butter
- Salt and pepper
- ½ cup shelled pistachios, grinded coarsely
- ¼ cup fresh mint, finely chopped
Directions:
- Place the diced turnips in a medium saucepan and cover with water by 2 inches. Bring the pot to a boil and cook the turnips for 10-12 minutes, or until tender when pierced with a knife.
- Drain the turnips and in the same pot, melt the butter over medium-low heat. Add in the turnips, season with ½ teaspoon salt and a large grinding of black pepper. Add in the pistachios and mint, and cook for 1 minute. Serve warm.
