This lovely winter salad is full of bright citrus flavors that will immediately rid any cold weather blues. Tender baby kale tossed with a sweet honey vinaigrette, creamy crumbles of feta cheese, peppery red onion slices and a mixture of grapefruit, orange and lemon slices. Refreshing and full of flavor, this salad is perfect alongside your favorite grilled fish or even a citrusy roast chicken.

Baby Kale-Citrus Salad with Honey Vinaigrette
Ingredients:
- 4 cups baby kale
- 1 navel orange, segmented
- 1 grapefruit, segmented
- 1 lemon, segmented
- Crumbled feta cheese
- ½ red onion, thinly sliced
- For the vinaigrette:
- 1 teaspoon honey
- ½ teaspoon Dijon mustard
- Crushed red pepper flakes
- Pinch of salt and pepper
- 3 Tablespoons red wine vinegar
- ¼ cup extra virgin olive oil
Directions:
- Toss the salad ingredients together gently. Whisk all of the vinaigrette’s ingredients together until emulsified; drizzle over the salad and serve.
