‘Wine-Pickled Beets’

 Taking the time to preserve the freshest produce of the season is always a good idea…especially when the recipe is as tasty as this one!  Pickling tender beets in a mixture of red wine, orange juice, red wine vinegar and aromatics not only adds an incredible, slightly sweet flavor to the beets, but it intensifies their already ruby red hue.  Keep stored in the fridge and use sliced on a bed of mixed greens for a unique salad add-on, or even sliced on a goat cheese-topped crostini as a quick appetizer idea.
